What collagen and gelatin actually are

Gelatin is simply cooked, partially broken-down collagen — the substance that turns bone broth syrupy when it cools. Nutritionally, all three are close cousins. They share an unusual amino acid profile heavy in glycine, proline, and hydroxyproline — amino acids that are relatively scarce in typical muscle meat, eggs, and dairy protein.
